Vegetarian Lunch Ideas
There are plenty of vegetarian lunch ideas out there. There is no need to feel like your options for a healthful vegetarian lunch are limited to salads or peanut butter and jelly.
Here are several easy and tasty options:
Guacamole and Tomato Wrap
Spread guacamole on a whole wheat wrap. Either a homemade
or store bought is fine. Place tomatoes in the wrap and roll up. Add a dash of seasoning, if desired.
Peanut Butter and Banana Bagel
Try this spin on a peanut butter sandwich. Toast bagel, if possible. Spread each side of any type of bagel lightly with peanut butter.
Add banana slices around the bagel. This is also good with on an English muffin.
Pita with Hummus and Veggies
Fill pita bread with any flavor of hummus. Add olives, spinach, bite-sized tomatoes, onions, etc. Sprinkle with feta cheese or any kind of shredded cheese.
Lay a spear pickle on top for a taste of pickle in each bite or put slices of pickle in the pita.
Fruity Yogurt Parfait
Not just for breakfast. Place one scoop of vanilla yogurt at the bottom of the bowl or dish. Any kind of bowl or even an ice cream dish will work.
Add a handful fruit, followed by another layer of yogurt.
Keep layering fruit and yogurt until the bowl is full. Top with fruit and low-fat granola or shredded coconut.
Leftovers from a Vegetarian Dinner
If you have access to a microwave at lunch time, consider heating up some left overs from dinner.
Leftover vegetarian pizza, pasta, casserole, etc. can be a filling, enjoyable vegetarian lunch.
