Vegetarian Potato Soup
Vegetarian potato soup is a wonderful vegetarian recipe because it really doesn't need to contain meat in the first place.
This is also great for serving to friends and family. Non-vegetarians can easily add after this vegetarian soup recipe is served.
2 1/2 cups of any type of vegetarian broth
1/2 cup minced onion
2 diced cloves of garlic
2 large, white potatoes
2 tablespoons of extra-virgin olive oil
1 tablespoon chopped parsley
Salt and pepper
1/2 cup of shredded cheddar cheese (optional)
Preparation & Cooking Instructions
Cook onion and garlic with the extra-virgin olive oil on medium heat in a large pot for about 5 minutes or until the onions are tender.
Wash, peel, and chop potatoes while onions and garlic are cooking on the stove top. Add potatoes to the pot and cook for about 3-4 minutes.
Next, pour in the vegetarian broth and sprinkle on a dash of salt and pepper.
Bring to boil, then lower the heat and allow it to simmer for about 30 minutes or until potatoes are very tender.
Keep the pot covered during this time. Stir every so often and check on it to prevent it burning.
Move vegetarian potato soup to a blender or food processor. Mix until it has reached the desired consistency.
Transfer soup back into the pot on low heat.Add 1/4 cup of the cheese, optional, and more salt and pepper, if needed.
When the cheese is melted or the vegetarian potato soup is warm enough, remove from heat and serve it right away.
Top with shredded cheese and parsley before enjoying.
Store any leftovers in an air tight container for up to one week. Freeze it to keep for longer. Makes a wonderful vegetarian snack or lunch as well.
