Vegetarian Potato Recipes: Part 2

Here are two more easy vegetarian potato recipes, as promised.

As I said in the previous post about vegetarian potato recipes , these are a wonderful comfort food! They can also be great for lunch and a nice break from sandwiches or salads.

With a bit of extra preparation they are also great ideas for vegetarian lunches for school or work and are a nice change from salads or sandwiches.

Sautéed Potato Tacos

While going out to eat, I noticed that some Mexican restaurants feature potato tacos on the menu.

These sounded a little odd at first, but I liked them once I tried them. Afterwards, I tried making my own sautéed potato tacos at home.

Peel and chop 2 medium potatoes into bite-sized pieces. Cook in a medium pan with Canola oil or butter until potatoes are golden-brown and tender.

Stir in 2-3 tablespoons of butter or margarine. Season with salt and pepper to taste.

Scoop into a taco shell. Hard or soft shells are fine for this vegetarian potato recipe.

Top with shredded cheese, sour cream, and/or a little hot sauce, if you like spicier food.

Store any leftover potatoes in a sealed container in there refrigerator for around a week. Freeze them and keep for much longer.

Potato Vegetable Medley

This is a great recipe to prepare in bulk. It is simple make and very nutritious.

Chop up 1 or 2 large potatoes. No need to peel the potato first.

In my opinion, this recipe tastes better with when the peel is left on the potatoes. It is also more nutritious.

Next, slice 2 bell peppers (use different colors, if possible), 1 or 2 large carrots, and 1/2 cup of mushrooms.

Add a tablespoon of dried minced onion and a dash of garlic powder.

Combine vegetables in a large pan. Cook with butter or Canola oil until the vegetables are tender.

Stir in 1/2 cup of cooked black beans for protein, if you like.

Season to taste.

These recipes make interesting vegetarian meals. Leftovers are great to use for future meals and side dishes.

Potatoes are a tasty vegetarian comfort food that are perfect meal after a busy day.
