Here is a simple and delicious guacamole recipe:
2-3 grape tomatoes or 1/4 of a medium-sized tomato (optional)
Juice from 1/3 of a lemon and 1/2 a lime
1 teaspoon of olive oil
1/4 teaspoon of garlic powder
Dash of minced onion
Wash and peel the avocados. Mash the avocados in a medium mixing bowl along with the tomato. This recipe will taste just as good without tomatoes, so don't worry if you don't have any or don't like them.
Stir in 1 teaspoon of of olive oil. This makes the texture more smooth. Mix in juice from 1/2 a lime and 1/3 of a lemon.It is ok to use store bought lemon and lime juice. About one teaspoon of lime juice and 1/2 a teaspoon of lemon juice will work.
Add a 1/4 teaspoon of garlic powder and just a dash of minced onion. Mix well. Enjoy this guacamole with tortilla chips, crackers, or even fresh vegetables or on a vegetarian sandwich. Leave one avocado bit in the bowl, in order to prevent it from turning brown.
This guacamole recipe is a tasty, healthful vegetarian snack
or vegetarian appetizer. Guacamole is also great for vegetarian salads and sandwiches. There are many ways to prepare it. So far, this is is my favorite.
