Apple recipes are great for vegetarian snacks. While apples are delicious to eat by themselves, this can get boring after awhile.
There a variety of ways to prepare apples, besides dipping them in peanut butter or caramel. Here are just a few easy apple recipes:
Apples with Cinnamon
Thinly slice your favorite type of apple. Sprinkle with about a tablespoon of cinnamon. Use a bit less if you don't want as much cinnamon flavor or a little more if you love cinnamon.
Microwave for about 30 seconds. If you would like them to be warmer, heat for an additional 15 seconds.
Also makes a good topping for yogurt or ice cream!
Veggie Waldorf Salad
Chop any kind of apple and a stick of celery into bite-sized pieces. Stir in a 1/2 cup of low-fat mayonnaise and one teaspoon of lemon juice.
Use a bit less mayo if you aren't a big fan.Although I don't like to slather mayonaise on everything, I think mayo tastes fine in this vegetarian snack recipe.
Throw in a handful of raisins or dried cranberries. Mix together well. Enjoy on crackers, in a salad, on toast or even as a sandwich. This also makes a great vegetarian lunch or appetizer.
Cinnamon Apple Pancakes

While this pancake recipe is just fine with thinly sliced apples, grating them or chopping them as small as you can is usually better, as the pancake is less likely to fall apart.
Turn pancake over. Cook until both sides are golden brown. Make mini pancakes to have smaller portions that are better for a vegetarian snack or just have this for breakfast.
Apple Cheese Bites
This is probably one of the simplest
apple recipes and makes a great snack.
Slice any kind of apple. Place slices of cheddar or mozzarella cheese on top. Chill in the refrigerator for a few minutes before enjoying.
