Vegetarian Salads



These are a few of my favorite vegetarian salads to make for myself at home. Salads are a staple for many vegetarians, especially if you eat out frequently.

After awhile,salads that consist only of iceberg lettuce,maybe some tomatoes, and salad dressing can get pretty dull. Add some variety to your vegetarian lifestyle with one of these tasty vegetarian salads.

Cranberry Walnut Salad

1 cup of spinach
1/4 cup of chopped walnuts
1/4 cup of dried of fresh cranberries
Handful of feta cheese

Combine spinach, walnuts, and cranberries in a bowl. Stir in desired amount of feta cheese. Typically, I just use a handful, but feel free to use more if you like. Top your salad with dressing. Ranch or another creamy dressing taste great with this salad and so does a vinaigrette.
Serves: 1

Veggie Waldorf Salad

2 large apples, chopped (preferably two different types)
1 cup of seedless grapes, sliced into bite-sized pieces
1/2 cup of chopped celery
1/4 cup of low-fat Ranch dressing
1/4 cup of chopped walnuts



Combine apples, celery, grapes, walnuts, and low-fat Ranch dressing. Some people use mayonnaise, which works well, I just don't like mayonnaise very much so prefer to use Ranch dressing Add lemon juice and seasoning to taste. Serve over Romaine lettuce leaves and enjoy.
Serves: 2

Veggie California BLT Salad

2 avocados, sliced
2 medium tomatoes sliced or 1 cup of cherry tomatoes
1 large cucumber, sliced
2 cups of spinach
Several slices of vegetarian bacon, chopped or sliced as finely as possible
1/4 cup of shredded cheddar cheese (optional)
Wash and slice avocados, tomatoes, and cucumbers into size desired. Peeling avocado is the hardest part of preparing this salad for me, so take your time. Peel cucumbers if you want. Combine sliced vegetables with spinach and cheese.

Prepare vegetarian bacon according to package instructions. Cut into bite-sized pieces. Top with salad dressing. My favorite dressing for this vegetarian salad is Ranch, but any kind will work.

Serves: 2


The salads listed above are some of my favorites to eat at home or to even bring with me for a nice vegetarian lunch in between classes. Many vegetarian salads also make great vegetarian sandwiches.
