5 Easy Vegetarian Dinner Recipes
Cooking healthy vegetarian dinner recipes is not always an easy task. After a long day, the thought of spending time in the kitchen to prepare a nutritious meal is as appealing as going to the dentist for a root canal.
Lucky for you, these vegetarian dinner recipes are quick and easy to make for yourself and even for friends or family members joining you for a home-cooked meal.
Try these easy dinner recipes!
Sautéed Veggie Wrap
2 whole wheat sandwich wraps
4 tablespoons of cream cheese or hummus
1 cup mushrooms, sliced or chopped is fine
1 bell pepper, chopped (any color)
1/2 cup of zucchini, chopped
1/2 cup of squash, chopped
1 cup fresh spinach
Sauté the vegetables, except the spinach, together with olive oil in a pan on a stove at medium heat. You can also use butter for more flavor, but olive oil is healthier.
Season to taste. Warm wrap in the microwave for about 10 seconds. Spread 2 tablespoons of cream cheese or hummus on each wrap. Add handful of fresh, uncooked spinach.
Fill wrap vegetables and roll it up.

Vegetarian Breakfast for Dinner
4 to 8 eggs
1 package of vegetarian bacon or sausage
Desired amount of bread to make toast or a tin of biscuits to make in the oven
Desired toppings and/or seasonings (i.e. ketchup, hot sauce, salt & pepper, etc.)
Breakfast for dinner is a popular meal for many. Enjoy it vegetarian style! Also makes an interesting vegetarian lunch idea.
Make your favorite egg recipe. Spice up scrambled eggs by adding peppers, spinach, onions, and spices if you like.
Then, find your favorite meat substitutes to serve with your eggs if you like. My favorite to serve with vegetarian breakfast for dinner is bacon, but sausage works well too.
Bake some biscuits, either from scratch or from a tin. Or just make some toast to serve with butter and jelly.
Cut up some fresh fruit, such as strawberries or bananas, for a nice vegetarian side dish.
Vegetable Stir Fry over Rice
1 cup of frozen or fresh vegetables
1 cup of brown rice
Butter and/or other seasonings, as desired
This is probably the simplest vegetarian dinner on this list. All you will need is a box of instant rice and either fresh vegetables that you cook on your stove top.
A bag of frozen veggies will also work just fine. Usually, I use brown rice because it is more nutritious, but use whatever kind of rice you like. If you are worried about getting enough

Cook rice according to instructions on the box. Personally, I use the microwave because it is faster and easier to do, but feel free to boil the rice if you want.
Same with the vegetables, if you are using frozen, as I often do. Otherwise, sauté vegetables in a pan with olive oil on medium heat.
1 package of taco shells
1 can of black beans
Small or medium tomato, chopped
1/2 to 1 cup of shredded lettuce
1/2 to 1 cup shredded cheese (optional)

Easy Cheesy Baked Potato
1 medium to large potato
1/2 cup of shredded cheddar cheese
Take on medium to large baked potato and cut several slits across the top. Microwave for 3-5 minutes, depending on the size.
Wrap in aluminum foil and let it sit for about 5 minutes. Sometimes when I'm really hungry I skip this step, however, it really does make the potato taste a lot better.
When the 5 minutes are up, unwrap the potato and cut in half. Sprinkle with shredded cheese.
Melt cheese in the microwave for about 30 seconds. If cheese is not melted enough, put it back in the microwave for an additional 10-15 seconds.
