Easy pasta recipes are a great staple for vegetarians because it is inexpensive, simple to prepare, and fun to make with others!

Here are 3 easy pasta recipes to try:




Veggie Fettuccine Alfredo

There are dozens of ways to prepare Fettucini Alfredo with veggies instead of meat. My favorite is to add sautéed mushrooms and peas.

Variations to this include adding freshly cooked spinach, bell peppers, olives, etc. Fresh or frozen vegetables are fine.

Sauté about 1 cup of mushrooms in butter on a medium sized pan at medium heat until tender. Normally, I use frozen peas for this recipe. Just heat them according to package instructions.

If you are using fresh peas, place them in a medium to large pot and bring to a boil for a few minutes. Then, let them simmer for a few minutes until they are tender.

Add desired amount of Alfredo sauce along with the vegetables to noodles.




Spaghetti with Mushroom Sauce

Prepare noodles for spaghetti as you normally would. Use different types of pasta once in awhile to mix things up.

In a medium sized pan at medium, sauté about 1 cup of mushrooms in butter until they are tender. Combine mushrooms with about 2 cups of tomato sauce.

When using store-bought sauce, I often add garlic and onion powder to make it more interesting. Stir well.

Top noodles with sauce and stir well to evenly distribute it. Sprinkle parmesan cheese on top, if desired.




Southwestern Vegetarian Pasta

Combine tomato sauce with garlic and onion powder. Add chili powder to make this vegetarian dish spicier, optional.

Pour sauce over cooked pasta. Add 1 cup of cooked black beans, 1/4 cup of chopped tomatoes (fresh or canned), and 1/2 cup of cooked corn kernels (again fresh or canned). Mix well.

Use more or less of any of the ingredients listed above, depending on personal preference.




A Word About Pasta Sauce


Keep in mind that the amount of sauce you use largely depends on how much pasta you are making.

Usually, I find that about 1/2 cup of sauce is good for every 1 cup of pasta. However, you may like more or less sauce. Go with whatever you like the most.
